Chicken or Shrimp Causa

Ingredients

  • 50 gr. Shrimp or Chicken
  • ½ pound of the best potatoes that you can find to mash (starchy)
  • Juice of ½ lime or according to your taste
  • 1 oz of vegetable oil
  • 2 spoons of Peruvian yellow peppers paste (this can be replaced with yellow curry or
  • any other non-spicy chili paste)
  • 01 spoon of hot chili paste
  • ½ Avocado, 01 boiled egg, 2 black olives, 01 oz. Mayonnaise, salt and pepper

Mise en Place:

  • To make the yellow peppers paste clean and de-seed the yellow peppers, boil them in water and once they are cooked, blend them with water and a bit of sunflower oil.
  • Place the potatoes in a pot with cold water and add salt, boil them, strain all the water and put the pot back to the fire on low to remove any excess moisture, then peel.
  • First mash the boiled potatoes, add a couple of circles of oil and yellow pepper paste and mix it together. Squeeze the lime juice according to your preference or taste, add salt and black pepper to taste, and mix it all very well.
  • Cut the avocado in slices, cut the black olives in thin strips. Mix the hot chili paste with the mayonnaise according to your taste or preference. Clean and devein the shrimp, season them with salt and pepper, and grill them. If you are using chicken, boil it with chicken stock then shred it.

Preparation:

  • Using an oiled mold, fill in thin layers, starting with the potato mix, then the avocado slices, diced black olives, the hot mayonnaise crème and the grilled shrimp or chicken. Top it with boiled egg and cover all with potato mix. Decorate and serve.
